Pollo relleno (Chicken coated in breadcrumbs)

This chicken dish, in some areas of Spain is eaten in a baguette sandwich as a hearty lunch. The chicken breasts are boneless with different fillings and shallow fried. Absolutely delicious.
(Chicken, breadcrumbs, Serano ham,red sweet peppers, eggs,oil for frying, mixed herbs, salt and pepper to taste.)
Variation of fillings available
1. Goats cheese and tomato.
2. Red sweet peppers and mushrooms.
3. Chorizo sausage and red sweet peppers.
4. cooked ham and tomato and manchego cheese.
5. Caramalised onions and thinly sliced grilled courgettes.
Preparation and cooking time approx 45 mins to an hour.
