The Spanish national dish is the paella and it began its life when the Moors brought rice to Spain. Although a lot of people think of paella as the cuisine itself, it is in fact the term used for the flat round dish the food is cooked in. Traditionally the paella would have been made of cast iron with rounded handles on either end so the paella could be carried with ease.

Paella as we know it evolved owing to farmers and peasant working in the fields and land. They would gather the fresh produce they had around them and combine it with rice, shellfish or snails. Only the more prosperous would add chicken or rabbit. The paella would then be cooked in the open air on roaring wood fires and served with bread and wine.

Now the paella is the main Spanish dish that everyone thinks of. There are many varieties including 'mixta', which contains rabbit or chicken, and paella de mariscos which contains shellfish. Whatever your choice, it is almost compulsory not to leave Spain without trying this truly magical dish.
