This is a classic dish from the regions of Navarre and Aragon.

There is no need to pre-salt these aubergines for this great tasting dish, quick and easy to prepare and so delicious.

(Aubergines, mushrooms, manchego cheese,onion, garlic, milk, plain flour butter, dried mixed herbs, sweet paprika, fresh parsley, salt and pepper to taste)
