Pollo relleno (Rolled and filled chicken)
This is an unusual dish that is boiled rather than fried or roasted.
The filling consists of a confit of mushrooms, which have been slowly cooked in unsalted butter, Serrano ham and cream cheese to produce a sausage that once cut reveals all its secrets inside.
(Chicken breasts, Serrano ham, mushrooms, goats cheese, mixed herbs, salt and pepper to taste)
